about using liquid nitrogen-- it sounds easier if you happen to liquid nitrogen handy.
I like Rachel Ray's idea of using a microplane to mince the garlic. Hold it by the root end and grate away. Toss that last little bit with the root. Much easier than the slicing the chef in the video is doing.
And I also like her other idea - Marry a man who loves garlic as much as you do, that way he doesn't mind if you smell like garlic. :D
Me? I cheat and get the bottled minced garlic from Costco. When a recipe calls for garlic, I just bring out the bottle and put in half again as much as the recipe calls for. That would constitute Almost Enough Garlic in our house. :D
